    People in the West Indies are blessed with a year-round supply of fresh vegetables. So, you will have no problem in finding the items for to prepare your Jamaican Recipes with fresh vegetables.

    Heavy rains determine availability in some cases. For instance, corn flourishes in the wet season, while tomatoes do better during the dry. Through most of the year the following items may be grown or purchased: green beans, spinach, patchoi, melongene (eggplant), sweet pepper, and carrots.

    For best quality and economy, it is best to buy vegetables in season. For the same reason, select vegetables of medium size and regular shape, fresh, crisp, and firm. Green vegetables spoil quickly; so purchase only enough of them for your immediate needs. Root vegetables will last longer but must be stored dry in a cool, dark place.
